INGREDIENTS
- 15 g coconut sugar
- 15 g dairy - butter or 15 tsp coconut oil
- 0.5 x fruit - banana (medium ~98G/3.46oz)
- 0.25 tsp cocoa powder (unsweetened)
- 10 g flour or 10 g oat flour
- 0.25 tsp baking powder
- 0.25 pinch salt
- 5g sugar-free chocolate chips
Method
- In a large bowl, whisk together the coconut sugar and butter until light and fluffy.
- Add the banana, cocoa powder, flour, chips and baking powder. Mix everything together until well combined. Cover the dough and refrigerate for about one hour.
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Scoop about 1 ½ tablespoons of dough per cookie into the baking sheet and leave space between cookies.
- Bake for 12 to 13 minutes. Sprinkle the salt on top right after coming out of the oven. Let the cookies cool down and enjoy!
